I love pasta dishes, so today I am sharing with you this healthy Spaghetti Aglio e Olio Recipe.
We are all about quick and easy recipes, so this one is perfect if you do not have much time but have to make something special for dinner.
What I love about this recipe is it only requires a handful of ingredients and you are good to go.
Plus I love garlic so much, and this Aglio e Olio is just a perfect combination of it.
But do not be afraid if you are not a fan of garlic, because it is not too empowering as long as you follow the right steps on cooking it.

Before we start cooking this healthy spaghetti Aglio e olio recipe, I need to give you a few notes.
Though it is a very simple recipe, the process can be a bit tricky.

The secret of making this Aglio e olio is to toast the garlic slowly in a low fire.
This technique allows the garlic to release the flavor into the oil without crisping and burning it.
You do not want to burn the garlic as it will cause a bitter taste on your Aglio e olio.
Also, it helps to cook the pasta and the garlic simultaneously.
Toasting the garlic takes about 3-5 minutes so you can start cooking the pasta almost the same time.
For most pasta dishes, we cook our pasta alongside the sauce.
We don’t rinse or drain the pasta and set it aside because that will just overcook it that may leave your pasta saggy which is a big no-no!
Another secret is to add or use the pasta water. Pasta water should be salty enough that it taste like a sea.
Particularly in this recipe, adding the pasta water will make up the sauce of Aglio e olio.
The water also helps mellow the bite of the garlic that is why I said in the beginning that it is not too empowering which I like.

INGREDIENTS
- 150-170 grams Vegan Spaghetti Pasta
- 3 Cloves of Garlic
- 3 Tablespoon of Olive Oil
- 1/2 cup Freshly chopped Parsley
- 1/2 Piece of Fresh Chili (change depends on your preference)
- Pinch of Salt
- Pinch of Pepper
- Homemade Parmesan Cheese (for Garnish, watch our video here)

INSTRUCTIONS

Prepare the Ingredients. Cut the Garlic, Chili, and Parsley.

In a large pot of boiling salted water, cook the pasta al dente. (Cook the pasta 1 minute less than the recommended cooking time)

In a separate pan, start sautéing the garlic in a low fire until golden brown then add the chili

Add a little bit of pasta water to the pan to prevent the garlic from burning.

When pasta is cooked add it in the Pan and cook with the garlic, chili and crushed pepper for another minute. Add pasta water if needed to keep it from drying.

Switch off the heat and add the Parsley and continue mixing until parsley is well incorporated.

Once done, serve it with homemade Parmesan Cheese.
