HOW TO DO IT

THE RECIPE

 This Vegan Chickpeas Nuggets Recipe was created by accident but it turns out to be so good we now make it so often!

We initially wanted to make some falafels but we are just missing the green ingredients like parsley because we rarely go to the shop because of quarantine.

So we decided to experiment on what we have and there the Vegan Chickpeas Nuggets were born!

Honestly, of course, it does not taste like the chicken nuggets of McDonald’s, but I say this is way better. Trust me.

I also made my favorite sauce which I have with any dry dishes like fried or baked and I love it.

But you can also make your sauce or dip and make sure to share it with me. I also tried it with tzatziki and loved it too.

So let’s try to make these Vegan Chickpeas Nuggets.

   INGREDIENTS

         NUGGETS

  • 5 Cups of Cooked Chickpeas
  • 1 Carrot
  • 1 Red Onion
  • 2 Cloves of Garlic
  • ½ Cup of Cornstarch or Tapioca starch
  • Herbs of your choice
  • Pinch of Salt
  • Pinch of Pepper

        BREADING

  • Gluten-free flour (we used rice flour)
  • Herbs of your choice
  • Pinch of Salt
  • Pinch of Pepper

       SAUCE

  • ½ cup of Vinegar
  • 1 Tablespoon of Maple Syrup
  • ½ red onion
  • Salt and Pepper
  • Chili Pepper

      INSTRUCTIONS

  • Prepare your ingredients.
  • Mash the cooked chickpeas.
  • Peel and shred the carrots and add it to the mashed chickpeas.
  • Minced the red onion and crushed garlic and added it to the Chickpeas.
  • In a small bowl, dissolve ½ cup of cornstarch or tapioca starch in about 1 cup of water and mix it well.
  • Add the cornstarch mixture to the chickpeas and mix it well. This will help the chickpeas bind together.
  • Add the herbs, a pinch of salt and pepper to taste and mix it well.
  • Prepare the breading, combine the rice flour, herbs, salt and pepper to taste.
  • Take a small portion, make a ball and flatten it with your palm and coat it with the prepared breading.
  • Line it to the baking sheet and bake in 180 degrees celsius for 20-30 minutes or until golden brown and crispy.
  • Prepare the Sauce. Combine ½ cup of vinegar, 1 tablespoon of maple syrup, salt, and pepper and add some chili for a little spice.
  • Best serve with rice and salad!

NOTES

You can easily make this with a food processor, just make sure to not mix it too long that the chickpeas become too soft like that of hummus. You want to make a dough-like consistency with a bit of crumb so you can easily form them.

Cornstarch or Tapioca Starch will serve as a replacement for the egg that will bind the chickpeas nuggets but it is important to dissolve it first in water so you can mix it well to the chickpeas.

For the herbs, we are just using what is in our cupboard. We added some dried rosemary, cardamom powder, garlic powder, and dried oregano. However, you can use whatever herbs you have available.

We coated it with some breading to make it extra crispy and tasty, however, you can skip it. Alternatively, you can use some vegan breadcrumbs if you have.

We baked it for approximately 25 minutes, however, I know that each oven is different so adjust it accordingly. 

As for the sauce, I shared what is my favorite, but as I have said feel free to pair it will your sauce. We have tried vegan tzatziki before and it was nice. I think vegan gravy will be nice too. I will try it next time for sure.
